Raw cocoa and baking cocoa are not the same. Raw cocoa is gently processed at low temperatures to preserve the natural nutrients and flavors. Baking cocoa, on the other hand, is heated to high temperatures, which means that many of the valuable ingredients are lost. Raw cocoa is therefore richer in nutrients, more aromatic than conventional baking cocoa and perfect for your hot drink.
Pure cocoa powder consists of 100% cocoa beans without additives. It is obtained by grinding and pressing the cocoa beans, removing most of the cocoa butter. The result is an intense, natural cocoa powder with a strong flavor and a high content of antioxidants and minerals.

The main difference is in the processing. Raw cocoa is processed at low temperatures below 45 °C to preserve the natural nutrients and enzymes. Raw cocoa often refers to cocoa that has been fermented and roasted, but is otherwise untreated and still contains most of its components. Real raw cocoa does contain a little more ingredients than fermented and roasted cocoa, but it also contains significantly more toxic ingredients such as hydrogen cyanide and oxalic acid. These can cause severe headaches and nausea and stress our bodies in ceremonial quantities (> 15 g). In our experience, real raw cocoa is therefore not suitable for cocoa ceremonies, where high doses of 30-40 g per cup are generally consumed. Raw cocoa can be consumed as a whole bean when hiking or climbing, for example, if you need energy quickly and don't eat a lot of it.
Raw food quality means that a food was not heated above 45 degrees Celsius during processing. This means that the natural nutrients, enzymes and flavors are largely retained. Raw food quality products, such as our cocoa powder and our cocoa nibs with yacon syrup, are particularly rich in nutrients and offer an authentic, mild taste experience. However, we recommend roasted cocoa as a drink, as the toxic ingredients such as hydrogen cyanide and oxalic acid have escaped and it is much more digestible for our bodies. Especially if we consume it in a ceremonial setting and in larger quantities.
To process cocoa into cocoa powder, some of the natural fat content (cocoa butter) always has to be extracted. With highly deoiled cocoa, more fat is removed, resulting in a lower fat content but a higher concentration of nutrients such as magnesium, calcium, potassium and iron. This means that highly deoiled cocoa dissolves better in water and is ideal for drinks. Low-fat cocoa, on the other hand, contains more fat and is less soluble, which makes it perfect for baking.
