For ceremonies, we use 30 to 35 g of our exquisite cocoa pastes per serving. To refine the taste experience, we add a teaspoon of coconut blossom sugar and a pinch of our special cocoa spice mix . These carefully selected ingredients are combined in a saucepan with a large cup (300 ml) of water. The mixture is heated on the stove at a low heat, taking care not to bring it to the boil. A whisk is used to gently stir the mixture and harmoniously combine the flavors.
For those who have a blender or hand blender, we recommend giving the cocoa an extra “massage”. This procedure gives the drink a velvety crema, similar to that used by a barista – an effect made possible by the natural cocoa butter contained in the drink.
If the cocoa is still too bitter for your taste, you have the option of either refining it with oat or coconut milk (50/50 to water) or sweetening it further with an additional portion of coconut blossom sugar or date syrup.
