White Criollo from the rainforest of Chiapas
This white Criollo is one of the rare finds in the cocoa world and is another premium product of our Single Farm Origin cocoa pastes from Mexico. A true pioneer in terms of nature-integrated cultivation, Don Margarito Mendoza plants his fine cocoa directly in the rainforest. He is a real role model cocoa farmer in many respects and has already received several awards for his fine cocoa at international competitions. We are grateful and proud to be able to offer his cocoa at Mangroovia.
EFFECT
After many sessions, the Blanco Jaguar can best be described as holistically complex and addresses all body regions and energy centers (chakras) equally. It is therefore ideal for ceremonies that are designed for holistic transformation.
TASTE
The Blanco Jaguar variety is characterized by a very creamy texture and a complex flavor with a distinct citrus note (grapefruit). The aroma has scents of milk chocolate, rose and orange blossom. It is 100% cocoa paste without any additives.
WHITE CRIOLLO COCOA
Criollo is described as the highest quality cocoa in the world. The difference to other types of cocoa lies in the genetics and the very fine aroma that only the Criollo varieties have. A special feature here are the white Criollos, also called Porcelanas or White Almond Criollos. These are another distinction within the Criollos and represent the finest cocoa beans in the world. Since there are only relatively few Criollo cocoa trees, and even fewer white Criollos, these varieties are rarer and therefore more expensive than others.

The natural cultivation of this type of cocoa contributes to protecting the forest, local biodiversity and thus also to the health and livelihood of the people living there. Don Margarito Mendoza is a real model cacaotero (cocoa farmer). He grows rare and very high-quality varieties directly in the intact rainforest, which allows the trees to grow naturally in the shade of taller trees. This means they get all their nutrients naturally from healthy soil and can develop natural defense mechanisms, supported by beneficial organisms from the forest. A natural cultivation that promotes biodiversity and the preservation of the forest.

PREPARATION

Note : Fermentation and roasting release the alkaloid theobromine contained in cocoa, which is responsible for the coveted psychoactive effect. The toxins contained in the raw cocoa beans, such as hydrogen cyanide and oxalic acid, are simultaneously reduced to a level that is tolerable to the body. The majority (>90%) of antioxidants and other positive active ingredients are retained during gentle roasting. Heating the cocoa releases the theobromine contained in the cocoa and enables it to be absorbed by the body.
