After that, we will transport it to Mexico City by the end of May, where Fausto and his team will take over further analysis and processing.\u003c\/p\u003e\n\n\u003cp\u003eFirst, sensory parameters such as \u003cstrong\u003eresidual moisture, possible defects, and aroma\u003c\/strong\u003e are checked. Subsequently, the cocoa beans are processed into cocoa paste in several steps – \u003cstrong\u003egentle roasting, shelling, grinding, 24–48 hours of traditional conching, tempering, and pouring\u003c\/strong\u003e.\u003c\/p\u003e\n\n\u003cp\u003eThe finished cocoa is then airtightly packaged and prepared for overseas transport.
